Koikawa Daiginjo is a premium Daiginjo from Koikawa Shuzo in Yamagata, where a small amount of distilled alcohol is added at pressing to capture volatile ginjo aromas more completely. Yamagata's cold winters provide ideal fermentation conditions for producing the delicate, complex bouquet expected of Daiginjo-grade sake. This expression represents the pinnacle of the traditional alcohol-added premium tier from this respected Shonai brewery.
