An aged junmai ginjo from Koikawashuzo stored at zero degrees Celsius for two years, a technique that slowly rounds out flavors while preserving freshness. The Umekawa label and the 'Rei Do Ni Nen' (zero degrees, two years) designation mark this as a deliberately matured expression within the brewery's lineup. Cold aging at sub-zero temperatures suppresses oxidation and yields a more integrated, layered profile than standard releases.
