
Reborn is a kijoshu from Mori Shuzojo, brewed kimoto-style using white koji and 100% Yamada Nishiki at 70% polish, where sake replaces a portion of the brewing water to create natural richness. Unlike heavy conventional kijoshu, white koji-derived citric acidity balances the sweetness, keeping the finish clean and approachable, with a grape-like nuance that intensifies on the palate.
