Description
Made using the mizumoto method, in which naturally soured water from raw rice and ambient lactic acid bacteria starts the ferment, this muroka nama genshu junmai is rooted in Nara's humid terroir. It opens with dried apricot and aged cheese character before shifting into acidity and minerality, with notes of ripe cantaloupe, vanilla, pineapple, clove and star anise. The finish is tight and clean rather than long lingering, undiluted and unfiltered throughout.
