Maikaze is a Gunma-bred sake rice developed jointly by the prefectural agricultural research center, and all sake bearing this label must use 100% Maikaze polished to 60% or finer with a Gunma-origin yeast. Tsuchida Shuzo's yamahai version draws on the brewery's tradition of lactic-culture-forward brewing, producing a textured, food-compatible sake with bright acidity.
