Fumotoi Kimoto Junmai Ginjo is fermented via the traditional kimoto method with Yamada Nishiki from Sakata, Yamagata, the heart of Fumotoi Shuzo's all-kimoto philosophy. Mt. Chokai snowmelt water and nearly 130 years of Tohoku brewing tradition shape its refined yet earthy, lactic-tinged ginjo character.
