Fumotoi Junmai Honkara Madoka is a dry junmai designed for food pairing from Fumotoi Shuzo at the foot of Mt. Chokai in Sakata, Yamagata. The all-kimoto brewing method and Mt. Chokai snowmelt water produce a firmly dry, well-structured sake with the earthy backbone characteristic of this 1894-founded house.
