The use of Senbonnishiki adds a regional cross-brewing dimension, and the rice's characteristics tend to support lighter, more restrained umami profiles. Niigata's cold water and careful fermentation elevate the natural qualities of this Shizuoka-origin rice into an elegant junmai expression.
