Azumamine Shuzo's Junmai using Ginotome rice polished to 55% is an expression of Iwate Prefecture's own cultivated sake rice heritage, brewed in Shiwa Town by a family brewery at the heart of Nanbu Toji craftsmanship since 1781. As an all-Junmai brewery since 2008, Azumamine uses Ginotome to express the umami-rich character of Iwate's mountain-grown rice.
