Tokubetsu junmai using Shinano Miyama Nishiki, pressed fresh and bottled as a nakagumi (middle-run) namazake to preserve the cleanest portion of the run. The Miyama Nishiki rice, grown in Nagano, produces a sake with apple-like fragrance and a layered umami with brisk acidity.
