
Description
Matsuyama Mii, an Ehime-bred sake rice with large grains suited to high polishing, is milled all the way to 40% for this junmai daiginjo. The brewery, run as a family operation at the foot of Ishizuchi Mountain, uses spring water from that peak and brews without a hired toji.
