Brewed with Ine Mankai, an ancient purple-black rice variety native to Ine town on Kyoto's Tango peninsula, polished to 88% to retain the grain's natural color pigments. The anthocyanins from the ancient rice create a distinctive rose-red hue, with a sweet-tart flavor reminiscent of fruit wine and a complex, layered umami.
