Mikotsuru Kinmon Nishiki Junmaishu is the pure-rice junmai expression using Kinmon Nishiki, Nagano's distinctive local sake rice, from Suwa Mikotsuru Shuzojo in Shimosuwa. At the junmai level, the Kinmon Nishiki rice expresses its characteristic richness and depth without ginjo-level polishing, producing a fuller-bodied, umami-forward sake that showcases the regional grain's inherent character alongside the Suwa district's pristine water.
