Koikawa Dewasansan Junmai Ginjo Hiyaoroshi is an autumnal release brewed with Dewasansan rice, a Yamagata variety known for its light, clean ginjo expression. Hiyaoroshi is a seasonal sake that matures through summer after a single spring pasteurization and is released in early autumn when it has developed a gentle mellowness. The Dewasansan rice and the hiyaoroshi seasonal aging together produce a refined, softened Junmai Ginjo suited to the harvest season.
