Junmai sake from a Nara brewery established in 1868, brewed with an emphasis on thorough koji cultivation for strong saccharification. The brewery uses Nara Prefecture-grown rice and locally isolated yeast, with over 80 percent of its lineup classified as tokutei meisho-shu.
