Hokuandaikoku Honjozo Namachozoshu is a honjozo from Kitaanjo Honke in Otari, Nagano, pasteurized once at bottling (namachozoshu) to preserve a fresher, livelier character than fully twice-pasteurized honjozo. Honjozo adds a small measured amount of distilled alcohol to rice polished to at least 70%, yielding a light body with slightly elevated fragrance. Otari Village, nestled in the northern Japan Alps near the Niigata border, provides cold, clear snowmelt water essential to the Hokuandaikoku house style.
