Miyama Nishiki polished to 59% gives this tokubetsu honjozo from Shusenkurano in Kawanakajima, Nagano, a firm rice character with clean umami and a dry, crisp finish characteristic of the Shinano region. Founded in 1540 and managed by a noted female toji lineage, the brewery draws on deep brewing tradition to craft this food-friendly everyday honjozo.
