Dai Shinshu Junmai Daiginjo N.A.C. Kinmon Nishiki uses Kinmon Nishiki (金紋錦), a Nagano-bred heirloom sake rice variety, polished to 49%. N.A.C. designates a Nagano Agricultural Center-certified rice, and this expression from Daishinshu Shuzo celebrates this local heritage variety grown by the brewery's contract farmers alongside its self-cultivated yeast and Northern Alps snowmelt well water.
