Azumamine Shuzo uses Yamada Nishiki, Japan's premier sake rice, polished to 50% for this Junmai Ginjo from Shiwa Town, Iwate, applying the Nanbu Toji's cold-climate fermentation tradition to produce a sake of refined elegance and depth. Founded in 1781, the brewery's century-spanning craft brings historical gravity to this premium expression.

Azuma Ren Sake Brewery was founded as Shiwa Sake Brewery in the first year of Tenmei (1781) in the middle of the Edo period. The predecessor was the "Gonbei Sake Store", which made the first "clear liquor" in Iwate during the Enpou (1670s), which led to the presence of this warehouse later. In this store, we inherit the main stream of southern drills, and we are making sake with a heartfelt sake with a small amount of 500 stones a year, which reaches all of the preparation, aiming for "Iwate -like liquor".
