Zouka is one of the specialty labels from Kamoizumi Sake Brewery, a Hiroshima pioneer founded in 1912 in Saijo, one of Japan's three most celebrated sake-producing cities. Kamoizumi became nationally known as a trailblazer of junmai brewing in the 1960s, and Zouka is crafted with Yamada Nishiki from the brewery's contract rice fields in the Higashi-Hiroshima highlands, following the house philosophy of minimal filtration to preserve full-bodied, richly umami-forward character.
