Wadaryu

Wadaryu Shuzo was established in 1887 along the historic Hokkoku Kaido road near the ruins of Ueda Castle in Nagano Prefecture, and its owner-brewer views sake as a special food culture that must reflect the land's own history and climate. The brewery uses Miyama Nishiki and Hitogokochi rice, both grown within Nagano Prefecture, combined with water from the Sugadaira system, to produce small-batch sake with individual character. Beyond brewing, Wadaryu provides guidance on optimal serving temperatures, glassware, and aging potential for each of its releases.
