Tuzyun is produced by Tuzyun Shuzo, one of the oldest breweries in Kumamoto Prefecture, established in 1792 in Yamato Town, a highland community blessed with clear air, cold winters, and clean water ideal for sake making. The brewery uses Kumamoto yeast developed by the Kumamoto Prefectural Alcohol Research Institute across its entire lineup, including styles beyond ginjo, producing an elegant, restrained aroma that does not overpower food. Close collaboration with local farmers and a strict commitment to cold-season brewing have sustained the brewery's tradition for over two centuries.
