Tsujizenbee

Tsujizenbee Shoten, founded in 1743 in Moka, Tochigi Prefecture, draws on well water from the brewery's original wooden-framed well and rice from one of Japan's top rice-growing regions. The 16th-generation brewer-owner has built a record of ten consecutive gold awards at the National Sake Competition as of 2024, a streak achieved by fewer than seven of the approximately 800 competing breweries. The brewery is also known for using temperature variation during aging rather than the conventional constant-temperature refrigeration, a distinctive technique that sets Tsujizenbee apart from most of its peers.
