Nakamura Shuzoujou was founded in 1804 in Akiruno City, Tokyo, drawing brewing water pumped from 170 meters underground through the ancient Chichibu Paleozoic rock strata that filter and purify it naturally. The brewery retains a strong hand-crafted process and maintains an adjacent museum with traditional tools, documents, and tasting facilities. Takaosan is one of the sake brands produced at this 220-year-old Tokyo kura, whose signature Chiyotsuru brand takes its name from a crane said to have flown over the Akigawa River basin long ago.
