Kaba Shuzojo, founded in 1704 in Hida, Gifu Prefecture, takes its brand name Shiramayumi from the Manyoshu, the eighth-century imperial anthology of Japanese poetry. Brewed with locally grown Hida rice and mountain water from the surrounding peaks, the sake carries the depth and character of the rugged Hida highlands.
