Launched in 2000 by Chiyoshuzou in Gose City, Nara Prefecture, Shinomine was built around the concept of sake that does not rush to sell but instead rewards patience and aging. The brewery uses underground water flowing from Mt. Katsuragi and focuses on heritage rice varieties often considered difficult to cultivate, aiming for pronounced, clean acidity and a balance that deepens over time rather than peaks at release.
