Maizakura

Maizakura is produced by Moriya Shuzo, a small brewery in Yachimatoshi (formerly Sanmu-gun), Chiba Prefecture, brewing exclusively with 100% Chiba-grown rice, making it the only sake brewery in the prefecture to maintain a pure-rice production standard using entirely local grain. The brewery sells a large share of its output directly from the cellar, allowing it to offer nama genshu (raw, undiluted sake) that would not survive standard distribution channels. Traditional methods including kimoto brewing and long-term aging under high-alcohol conditions define its distinct house character.
