The brewery blends two distinct water sources for its sake, alternating between the soft alluvial water of the Nishiki River and hard spring water rising through limestone, selecting each for different styles. Local contract-grown Seitounoshizuku sake rice anchors the flagship range, which is characterized by a full-bodied palate suited to rich, flavorful dishes.
