Kikutsukasa

Kikutsukasa is produced by Kikutsukasa Jouzou in Ikoma, Nara Prefecture, a brewery that has been crafting sake in the old castle-town of Kose since 1705, celebrating its 300th anniversary in 2005. The current brewmaster serves as his own toji, pressing all sake through traditional fune-style wooden boxes and storing every bottle under refrigeration to preserve freshness. Water from the Ikoma mountain range, carefully selected sake rice, and clean mountain air combine to create what the brewery describes as a naturally mellow and smooth taste.
