Kikusakari is produced by Shinshu Meijo, a brewery built beside the Yoda River tributary of the Chikumagawa in Ueda City, Nagano, specifically chosen for its high-quality brewing water. The brewery combines traditional handcraft methods with modern technique, maintaining an uncompromising focus on quality at each step of production. Shinshu Meijo also produces the Kanae brand, with Kikusakari representing the brewery's deep roots in Nagano's sake heritage.
