Hiroki Shuzo Honten has operated in Aizubange Town, Fukushima Prefecture, since the middle of the Edo period, and in 1999 the ninth-generation owner Kenji Hiroki launched the Hiroki brand, which quickly became one of the defining labels of Japan's early 2000s sake boom. The brewery applies daiginjo-grade care to each step of production and maintains strict temperature controls to balance umami and avoid off-flavors, creating sake with a refreshing, clean, mellow, and classy character across both standard and limited releases. Hiroki's combination of consistent quality and limited availability has made it one of the most sought-after sake brands in Japan.
