Hiroki Yamadaho Junmai Ginjo uses Yamada-ho, the direct ancestor of Yamada Nishiki, at Hiroki Shuzo Honten in Aizusakashita, Fukushima. The ancient rice variety, rarely used in modern brewing, imparts an intricate, slightly wild richness and pronounced umami that distinguishes this limited release from the brewery's standard Yamada Nishiki expressions.
