Hibabijin

Hibabijin Shuzo was born in 1960 from the merger of nine local breweries scattered across the Hiba district of Hiroshima Prefecture, taking its name from the old Hiba County in the Chugoku Mountains. The brewery uses water flowing from Mount Hiba and locally grown sake rice, conducting its own rice polishing to achieve a crisp, rice-forward flavor profile. Snow-aged varieties stored in natural snow are among the brewery's distinctive seasonal offerings.
