Bizan, named after the symbolic mountain that presides over Tokushima City, is brewed by Yoshimoto Jozo, a brewery founded in 1872 in Tokushima Prefecture on Shikoku island. Committed to handcrafted production, the brewery uses locally sourced Yamada Nishiki and traditional techniques passed down across generations. The brand includes a ginjo, a junmai, and a long-aged aged sake that has matured for seven or more years.
