Asahibori is a morning-pressed sake line from Endo Shuzojo, founded in 1864 in Suzaka City, Nagano Prefecture, as a supplier to the Suzaka Domain. The brewery's flagship is Keiryu, but its Asahibori label captures the freshness of sake pressed and bottled at dawn, reflecting the small-batch, seasonal production philosophy the brewery has followed for over 150 years. Endo Shuzojo uses spring water from the Negoko mountain range rich in magnesium, which supports active fermentation, and has won gold at the National New Sake Competition.
