Sake no Hana, a heritage rice variety revived from the Taisho era by Nakaoki Sake Brewery's own farmers, is polished to 45% for this genshu from Kawanishi, Yamagata. Undiluted genshu bottling preserves the full concentration of flavor extracted from this rare, locally cultivated grain.
