Junmai ginjo using Dewa Sansan rice polished to 50%, a Yamagata original sake rice that tends toward clean, fragrant sake. Brewed at the small Kawanishi-machi brewery established in 1923, it reflects the brewery's focus on subtle, food-compatible expressions made entirely from Yamagata-grown rice.
