This unpasteurized yamahai junmai, fermented with wild yeast, carries bold aromas of leather, sour lemon, cooked chestnuts and dark chocolate. At 22 percent alcohol, it drinks thick and chewy with punchy citrus and layered sweet and sour tones, delivering an intense, full bodied character.
