自古以來,酒的熟成——即時間釀就的風味——始終令我心動。葡萄酒和威士忌中理所當然的年份概念,我認為在日本酒中尚未真正普及。出於對「時間」這一飲酒方式的嚮往,自2010年起開始嘗試熟成釀造。選擇了能經得住長期熟成的工藝,並以山廢仕込作為新的挑戰。從2013年起加入酵母,改用天然酵母釀製。使用「那一年」的水、米、酵母,飽含著對「那一年」的深情釀就的酒。希望您能細細品味各個年份的風情。商品名「琥刻」,蘊含了這湖畔土地與人們共同釀就之酒的意涵。歲月積澱帶來厚度與深度,終化為琥珀色。帶著這份心意命名。標籤以刻入倉庫的槍痕表現年份,別具設計感。
