釀造日本酒時需要經過精米這道工序。常規純米酒淨含量為60%(米糠40%),大吟釀精米步合為40%(米糠60%)。一般來說,精米越多口感越清爽,但我們也在挑戰以低精米率釀造。降低精米率能讓人感受到大米本身顆粒固有的鮮味。這款「低精白純米80%精米」正體現了低精白特有的深厚風味。推薦與口味濃郁或風味深厚的料理搭配。此酒使用的酒米是滋賀縣具代表性的品種之一,質地堅硬且獨特,熟成後風味愈發豐富,適合長期熟成。口感紮實,但得益於酸味,是一款讓人忍不住在就餐時多飲幾杯的酒。與「低精白純米八割生原酒」相比,風味更為沉穩深邃。無論常溫還是加熱,都別有一番風味。
