Yamada Nishiki polished to 45% forms the basis of this Daiginjo from the Soranotsuru lineup in Akashi, Hyogo. The sake presents a mellow, slightly weighty character for a daiginjo, with a faint sweetness that gives way to a dry, mildly bitter finish.
