Honjozo Soranotsuru from the Nishiumishuzou brewery in Akashi, Hyogo, is made with self-cultivated rice from the brewery's own paddies, using no chemical fertilizers. The house style leans moderately dry with rounded umami and a clean finish, following a tradition established when the brewery was founded in 1716.
