Contrail is brewed at one of Nagano's smallest sake breweries, fermenting its mash for about 35 days at low temperatures to develop clean umami and a crisp finish. The label depicts an airplane contrail, symbolizing a clean line through the sky much like the sake's clear, dry profile.
