Junmai Daiginjo Genshu Bingakoi Manai from Hakurei Brewing in Kyoto's Miyazu region is an undiluted (genshu) junmai daiginjo that has been bottle-aged (bingakoi) to develop greater depth and integration of flavor. Hakurei was founded in 1832 and draws its brewing water from mountain springs flowing down from the hills surrounding the Kyotango coast. The Manai label honors the pure spring water sources that define the brewery's house character.
