Honjozo genshu from Shimizu Shuzo in Sagamihara, Kanagawa, bottled without water dilution at a higher alcohol concentration. The brewery draws ultra-soft water from 50 meters underground for all fermentation, yielding a sake with a compact structure and lively presence on the palate.
