Polished to 68% from Onda Shuzo's self-grown Ipponjime rice in Nagaoka, Niigata, this honjozo shows a light body with clean, gentle sweetness and a refreshing, slightly dry finish. The brewery's five-person team handles both the paddies and the brewing cellar.
