創業於明治28年，全品純米釀造。為讓消費者不受標籤術語左右、找到真正喜愛的產品，酒造以吟釀之心釀造，但不使用大吟釀標注。為表現平戶風土，大部分使用產自平戶的山田錦及在平戶梯田種植的食用米（日本晴、越光米、日向光），其中越光米和日向光產自被列為世界遺產的春日梯田。釀造師積極推動無農藥米合作，並已著手兩個無農藥米品牌，以無過濾生原酒出貨，不加水稀釋。
