Description

The traditional kimoto method, in which natural lactic acid bacteria cultivate the yeast starter without artificial additions, underpins this junmai ginjo from a Saitama brewery dedicated entirely to pure rice sake since 1987. A minimum of three years of aging before release allows the sake to develop layered umami and a clean, persistent finish.
