Part of Emishiki Shuzo's Elements of Life series, this junmai daiginjo is fermented with strawberry flower yeast (hanakobo) developed at Tokyo Agricultural University, yielding a delicate aroma reminiscent of fresh strawberries in bloom. Brewed in Koka, Shiga, exclusively with locally sourced rice by this three-person brewery, it balances soft floral sweetness with the clean, refreshing acidity that defines the house style.
