Description

Sawanotsuru, founded in 1717 in Nada-ku, Kobe, is one of Japan's largest sake producers and among the most decorated, accumulating five Grand Gold Medals and 41 Gold Medals across its product range in major competitions. The Daiginjo Syunsyuu Tsubo (Spring Autumn Jar) is a prestige release bottled individually in ceramic tsubo containers, a presentation format that evokes the traditional practice of aging the finest sake in earthenware to allow controlled micro-oxygenation and gradual flavor development. Nada's Miyamizu hard water, drawn from the Rokko mountain system, provides the mineral backbone that gives Sawanotsuru's daiginjo expressions their characteristic structure even at the highly polished ginjo tier. The combination of Nada's centuries-old brewing infrastructure and the tsubo aging method places this expression at the ceremonial end of the Sawanotsuru lineup.
